This meal is embarrassingly easy but so filling and delicious. To make it as simple as possible I use one of the Minute rice bowls (work smarter, not harder right?) and use that as the base of the dish. You could always make a batch of rice ahead of time and just reheat, whichever you prefer. In 5 minutes you have an easy lunch or light dinner!
5 Minute Avocado Rice Bowl
ingredients:
1 poached egg
fresh avocado slices
1 minute rice individual container
sriracha (optional)
directions:
Poach an egg (tips here; I never use the vinegar) and gently place over the cooked rice.
Top with slices of avocado and a few drizzles of sriracha for an added kick.
Enjoy!

I’d be embarrassed to admit how many rice bowls we consume as meals during the week. They are just too easy! I’ve tried a few different frozen brown rice options (all about working smarter), but Trader Joe’s frozen brown rice is my favorite. It also happens to be the perfect amount for two (Levi gets 3/4, I eat 1/4)!

Five-minute rice bowls (or just five-minute anything, really) are amazing. This looks a lot like a dish I saw on some show recently for crazy-busy food trucks in DC. Must try!
