There’s a time and a place for recipes that call for twenty ingredients and an hour of prep time. That is not one that you’ll find around me lately. I’m not sure if it’s the warm weather or a busy schedule, but spending a long time in the kitchen simply hasn’t sounded appealing lately. I’ve been searching for any recipes that are quick, simple and still healthy. If you have any favorites, please send them my way!
I typically make quinoa on Sunday night or Monday during lunch and use it throughout the week in various recipes. It’s a great addition to a salad (also add chickpeas- so good!), toss with fresh veggies or spruce up a standard caprese salad.
Quinoa & Burrata Caprese Salad

ingredients:
2 medium tomatoes
1 packaged ball of Burrata cheese
1/2 c. quinoa, cooked
5-6 basil leaves, thinly sliced
1 1/2 tbsp good olive oil
2 tsp balsamic vinegar
sea salt & pepper
directions:
Layer tomato slices in a salad bowl or plate. Remove the Burrata cheese from the package and drain the water. Gently tear the cheese ball in half and save the other half for another salad or on top of pizza. Add the quinoa and basil leaves and drizzle with olive oil and balsamic vinegar. Season with the sea salt and pepper.

You always have the best heathy recipes! This looks so good! I’m always trying to find ways to eat more quinoa because by itself it tastes to bland. Never heard of Burrato cheese but it looks tasty!
