I like to get as much use as possible out of a grill and will pull grilling recipes until it’s too cold to stand outside anymore. The flavor that comes from cooking food this way is the best in my opinion. B and I had some friends over for dinner the other night and since it was beautiful in St. Louis we opted to try a new easy recipe that wouldn’t heat up the apartment. I let the chicken sit in the marinade for around three hours and the flavor was delicious! We used an Oktoberfest beer in the recipe, but any beer would work. You could probably also use this as a bake in the oven come winter time.
Grilled Chicken Marinade
via add a pinch
ingredients:
1/2 c. olive oil (I used a little less)
1 tsp sea salt
1/2 tsp. black ground pepper
1/2 tsp. paprika
1/2 tsp cumin
1/4 tsp cayenne pepper
2 cloves garlic, chopped
3 tbsp chopped onion
1/2 c. chopped fresh parsley
1.5 c. beer (I used Oktoberfest)
directions:
Mix together salt, pepper, paprika, cumin, cayenne pepper and add to the olive oil. Add garlic, onions and parsley. Mix together well with a fork. Slowly add beer so it doesn’t foam and spill over. Next, pour marinade over the chicken in a zip lock bag. Remove as much air as possible from the bag and seal. Turn the bag over and over to make sure all of the chicken is coated with the marinade. Place the bag in your refrigerator and let sit for a minimum of one hour or overnight. Turn the bag every few hours to continuously coat the chicken.
