I know most crock pot recipes are easy, but this one is a complete no brainer. It takes a matter of minutes to throw together and makes for the most flavorful and juicy meat. B and I served with some steamed vegetables and roasted potatoes and it was a quick and easy dinner. There are plenty of leftovers for lunch, on top of salads or shredded or to add in a soup.
Crockpot Beer Chicken

ingredients:
1 cut up whole chicken (or any boneless, skinless chicken breasts/thighs)
1 can of beer (we used a pumpkin beer)
Spices ( we used onion powder, salt & pepper, garlic salt, paprika, oregano, parsley)
directions:
Spray crockpot with non-stick spray and place chicken inside. Pour beer over chicken. Sprinkle the herbs/spices over the chicken. Don’t be afraid to have a heavy hand on the spices. I really coated my chicken with the spices. Cook on low for 6-8 hours or 4-6 hours on high. If chicken is frozen, be sure to check chicken is cooked through.

I’ve made beer can chicken before but why have I never thought about the crockpot? I have soooooo much frozen chicken I have to use and plenty of beer I think I need to make this recipe this week!
