Any dish that can be made in one pan and cuts down on dishes to clean is a winner. This one pan greek chicken is dripping with flavor and if you can cut vegetables you can make this meal. I made this dinner for my parents when they were in town last week and needless to say, there weren’t any leftovers. Chicken thighs were amazing in this, but you could also use chicken breasts if it’s what you have on hand; just adjust the cook time accordingly. Be sure to line the pan with some type of parchment paper or non-stick coating. I used my trusty silpat and it worked wonders. If you don’t have one of those I can’t recommend them enough! Nothing makes cleaning easier. #adulting
One Pan Greek Chicken

ingredients:
16 ounces baby red potatoes, halved (I quartered mine)
16 ounces green beans, trimmed
2 tbsp olive oil
himalayan salt and freshly ground black pepper, to taste
2 tbsp chopped fresh parsley leaves
for the marinade:
8 bone-in, skin-on chicken thighs
1/4 cup olive oil
3 cloves garlic, minced
Juice of 1 lemon
1 tbsp red wine vinegar
1 tablespoon dried oregano
directions:
In a large Ziploc bag or bowl, combine chicken and all marinade ingredients. Let marinate a minimum of 20 minutes to an hour, flipping the bag over every so often to make sure the chicken is coated. Remove the chicken from the marinade once done and set aside. Discard the marinade. Heat oven to 400 F. Spray a large baking sheet with non-stick spray or use a silpat. Spread potatoes and green beans onto the baking sheet so they don’t overlap. Drizzle with olive oil and season with salt and pepper. Place the chicken on top/in-between the veggies.
Bake about 25-30 minutes, or until the chicken is no longer pink inside. Turn the oven up to broil for 2-3 minutes and let the chicken get a nice browned top. Serve and enjoy! Add fresh parsley for added flavor.
