Happy New Year! I’m back sharing my weekly meal plans and hope to inspire y’all to get in the kitchen and try something new this week! This week I’m trying out a handful of recipes from my new cookbook. side note – out of respect for the authors, I don’t share published cookbook recipes unless they’re also online. I’m a huge fan of Alex’s healthy recipes and highly recommend her first and second cookbook if you don’t have them!
We have gymnastics and tennis on Tuesday and Wednesdays, so I try to focus on speedy dinners that require minimal prep + cook time those evenings.
sunday: slow cooker chicken stew
I’m always looking for an easy recipe to wind down the weekend with!
monday: one pan coconut lime chicken & rice
tuesday: one pot green curry veggie noodles
wednesday: red pepper miso buddha bowls
thursday: lasagna (a great, easy to assemble recipe!) + simple green salad
