Meal Planning Ideas

It’s been freezing in Charleston this weekend, so I’m looking forward to some cozy, hearty dishes at the start of the week and when it warms up on Thursday we’re celebrating with easy sheet pan fajitas and guacamole. Hope each of you has a wonderful week ahead!

We usually have some form of a buddha bowl weekly because it’s such an easy to assemble dinner that’s packed with good for you grains and vegetables and lets me use up any produce before it goes bad. I mix it up depending on what we have in the fridge, but always include the peanut sauce (save on my instagram story ‘food’ highlight) drizzled on top for extra flavor.

sunday:
herb and chickpea stew with rice

monday:
crockpot tuscan garlic chicken thighs
served over right rice /quinoa/couscous

tuesday:
buddha bowls
quinoa base, roasted veggies, sautéed kale, avocado, peanut sauce (saved on my ‘food’ story highlight too)

wednesday:
sausage dinner with roasted vegetables 

thursday:
30 minute sheet pan chicken fajitas
with salsa + guacamole

    YUM! Now I have my eye on two of these recipes for this week – crockpot chicken recipe as well as the chicken fajitas. Love that these are quick to pull together! Thank you!
