When I’m out at a Mexican restaurant I tend to always order tacos or a taco salad. Chimichangas aren’t typically the healthy option on the menu since they’re often fried, but this version is so simple to make and are a lighter option since they’re baked. It’s a great weeknight menu when you’re pressed for time and just want a quick dinner. I cooked the chicken in the crockpot (using this recipe) to make things even easier, but you could also shred a rotisserie chicken. Feel free to spice the recipe up with any of your favorite ingredients!
Baked Chicken Chimichangas
via creme de la crumb
ingredients:
4 large burrito size flour tortillas
1/2 c refried beans
1 c guacamole
2 c shredded chicken
1 c shredded Mexican style cheese
salsa (optional)
directions:
Heat oven to 425 degrees F and spray a baking sheet with non-stick spray. Lay your tortillas out on a flat surface. Spread refried beans in the middle of each tortilla. Add the guacamole on top of the beans. Add shredded chicken then shredded cheese. Roll into a burrito. Repeat for the remaining 3 tortillas. Place the burritos on prepared baking sheet and gently spray with cooking spray or brush with oil. Bake for 15-20 minutes until the tortillas are browned and crispy. Serve with additional guacamole and salsa.
* Next time I plan on adding some diced jalapeños into the mix to kick the heat up a bit!
OMG I have to try this one – chimichangas are my favorite, but definitely not paleo! ;)I might attempt to make them with corn tortillas so they’ll be gluten free! 🙂

Chimichangas are delicious, but I tend to avoid ordering them out as well since they are fried and I am already stuffing my face with chips and salsa obviously! I love that you have a baked version here!
