Slow Cooker Light Tortilla Soup Healthy Crockpot Tortilla Soup Recipe

What better way to kick off September than with a flavor packed, healthy soup? I’m a crockpot advocate year round, but especially come fall/winter. I just picked up this one that automatically switches to the warming setting once the cooking timer is up and while that may not seem like a big deal, it helps so much for me! No more running back home to switch the settings manually. This is adulthood ladies. We topped our bowls of soup with cheese and avocado, naturally. The cheese melting is pure goodness.

Healthy Crockpot Chicken Tortilla Soup

ingredients:
1 Lb. Boneless Skinless Chicken Breasts (About 2-3 Breasts)
10 Oz. Diced Tomatoes With Green Chilies
14.5 Oz. Diced or Whole Peeled Tomatoes (No Salt Added)
1 C. Corn (I used frozen)
14.5 Oz. Black Beans (No Salt Added), Drained & Rinsed
1 Medium White Onion, Diced
1-2 Jalapeño, Diced
2 Cloves Garlic, Minced
2-3 C. Reduced Sodium Chicken Broth
1 Tsp. Ground Cumin
1 Tsp. Chili Powder
1 Tsp. Salt
1/4 Tsp. Black Pepper

directions:
combine all ingredients in the crockpot and stir to combine. Cook on low for 6-8 hours. Top with shredded cheese, avocado slices, sour cream/greek onion and a squeeze of fresh lime.

    I love tortilla soup but the calories and sodium can definitely add up, so I appreciate this lightened version (and I love any excuse to use my crockpot!).
