Blueberry Banana Chia Bars
One of my favorite parts of summer is the abundance of fresh fruit everywhere. As much as I’m already craving cooler weather, I’m going to miss all the fruit! We had a big carton of blueberries that needed to be used up and these healthy blueberry banana chia bars were the perfect recipe. These oat bars could easily be a tasty breakfast, afternoon snack or even with a scoop of ice-cream on them for dessert. I love recipes like this that rely on natural sweeteners like ripe bananas in place of brown or white sugar. Even better that these can be made with frozen blueberries and enjoyed year-round!

Blueberry Banana Chia Bars

Ingredients
Blueberry Chia Jam
  • 2 cups blueberries fresh or frozen
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds
Oat Bars
  • 2 cups rolled oats not quick-cooking
  • 1 tsp baking powder
  • 2 medium ripe bananas mashed
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

  • 2 cups blueberries fresh or frozen
  • 2 tbsp maple syrup
  • 2 tbsp chia seeds
Oat Bars
  • 2 cups rolled oats not quick-cooking
  • 1 tsp baking powder
  • 2 medium ripe bananas mashed
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
Instructions
for the chia jam:
  1. Combine blueberries and maple syrup in a saucepan over medium heat. Warm the berries for 5-10 minutes (depending if fresh or frozen) to draw out their liquid. Heat to boiling and stir every so often as the berry liquid begins to thicken.
  2. Next, add in the chia seeds and stir to combine. Heat for another 3-5 minutes and then remove from heat. The longer the 'jam' sits the thicker it will become.
for the oat bars:
  1. Heat oven to 375 F. Line an 8x8 baking dish with parchment paper, leaving some excess on the sides so you can easily lift the bars up when finished baking.
  2. Using a food processor, pulse 1 cup of the rolled oats until it becomes a smooth flour. In a mixing bowl combine the new oat flour, remaining 1 cup of rolled oats and baking powder.
  3. Add the mashed bananas, vanilla extract and maple syrup into the oat mixture and stir to evenly combine. This mixture becomes the 'dough' for the oat bars.
  4. Spread 2/3 of the 'dough' on the bottom of the baking dish. Top with the blueberry jam mixture and evenly spread, keeping 1/4 inch of the jam away from the edge of the dough to prevent burning. Add the remaining oat dough on top of the jam and spread to coat.
  5. Bake for 28-30 minutes. Let cool and enjoy!
