I always have some type of sweets around the house and the healthier options I can offer, the better. This chocolate chip cookie recipe is paleo, grain-free, refined sugar free and dairy free. The minimal ingredient list makes it easy to toss together and includes items I almost always have in the pantry. Sprinkle some Himalayan sea salt for the perfect finishing touch!
If you need an easy and tasty Valentine’s Day treat these would be delicious served warm or made into ice-cream sandwiches! Not to mention they make a great little gift for teachers, friends, neighbors, etc.

- 2 cups almond flour
- 1/2 tsp himalaya sea salt
- 1/4 tsp baking soda
- 1/4 cup coconut oil melted
- 1/4 cup maple syrup
- 1 cup chocolate chips I love enjoy life brand or lily's

Instructions
- Heat oven to 350 F. Line a large baking sheet with parchment paper or a non-stick mat.
- In a large mixing bowl combine the flour, salt, baking soda,coconut oil, and maple syrup. The dough will be crumbly - that's ok! Stir in the chocolate chips
- Scoop tablespoon size portions onto the baking sheet and bake for 10-15 minutes. Gently press down on each dough ball to flatten.
