BBQ Chicken Drumstick RecipeI searched all over my blog for this recipe because with the amount of time I’ve made this for us, I was sure I’d already shared it. My cousin originally introduced me to this recipe and it’s so incredibly good. A great weeknight dinner that doesn’t involve any crazy long marinades and instead uses a flavorful dry rub. This is a great recipe for prepping the chicken the night before with the rub and then just pop in the oven after work the next day. It definitely has some kick to it, so adjust the seasonings as desired!

The original recipe calls for 4 lbs of drumsticks, but I usually just use 1 lb, eyeball the amount of dry rub used on the drumsticks and save the rest in a mason jar to use the next time. For a full meal, I pair it with a small side salad and either mac and cheese, grilled corn or another fresh veggie!

Baked BBQ Chicken Drumsticks

Ingredients
  • 1 lb chicken drumsticks
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp chili powder
  • 2 tbsp smoked paprika
  • 1 tbsp ground ginger
  • 2 tsp salt
  • 1 tsp pepper
  • 1 cup barbecue sauce my favorite is Tessemae's!

  • 1 lb chicken drumsticks

Instructions
  1. Heat oven to 350 F. Place a large cooling rack on top of a large baking sheet lined with parchment paper (makes cleaning up so much easier!)
  2. Using a paper towel pat all sides of the chicken dry
  3. Mix all ingredients for the seasoning and set aside
  4. Rub the seasoning all over the chicken drumsticks and cover, letting sit for 30 minutes- overnight
  5. Place chicken on the baking sheet and bake for 40 minutes. Flip drumsticks half way through to make sure both sides get crispy
  6. Using a silicone brush coat each side with bbq sauce and cook for an additional 10 minutes
  7. Use another coat of bbq sauce and flip the drumsticks, cooking another 10 minutes
  8. When chicken is cooked (165F) turn on the broiler and cook for 2 additional minutes to make it a little extra crispy. Enjoy!
