Is it just me or are there multiple bugs/the flu going around and everyone seems to be getting sick or just recovering? Our house can’t seem to catch a break from colds to stomach bugs and lately we’ve been gravitating towards all the comfort foods. This chicken zoodle soup recipe is easy, healthy and such a delicious twist on an old favorite.

Ingredients
- 1 tbsp coconut oil
- 1/2 sweet onion diced
- 3 garlic cloves minced
- 1 red bell pepper thinly sliced
- 1/2 cup baby carrots sliced into rounds
- 1/2 tsp fresh ginger grated
- 2 tbsp red curry paste
- 1/3 cup sugar snap peas
- 1 1/2 cups chicken broth
- 1 14 oz can coconut milk full-fat or light, your preference
- 1 cup chicken cooked and shredded
- 1-2 zucchini spiralized
- 3 tbsp fresh cilantro chopped
- 2 green onions sliced
- lime wedges optional, for serving

Instructions
- Heat coconut oil in a large dutch oven over medium heat. Add in the onions, garlic, pepper, carrots, ginger and sprinkle of salt and pepper
- Cook, stirring occasionally for 5 minutes and vegetables has softened. Mix in the red curry paste
- Pour in the chicken stock, coconut milk, snap peas and cooked chicken. Raise the temperature and bring mixture to a boil. Once boiling, reduce to low, top with lid and cook for 5 minutes.
- Add in the zoodles and stir for 1 minute.
- Serve and enjoy! Top with green onions and cilantro.

Totally making this for my husband! Anything with coconut milk and he’s sold!
Sounds delicious! I would have to omit the coconut milk though. For some reason every time I have tried it I don’t feel well the next day. :-/ Speaking of, I am sorry that you guys have been battling illness!! 🙁 My husband had the flu last week and I have been on Tamiflu as a preventative measure.
