This oven baked taco recipe is such a great weeknight option and is ready in under 30 minutes! We make it at least once a month, and I love that it’s easily customizable to your preferences. I like serving it with Spanish corn, fresh guacamole and salsa. Enjoy!

Ingredients
- 1 lb ground beef or turkey
- 1 14.5 oz petite diced tomatoes drained
- 1 packet taco seasoning
- 1 cup cheese divided
- 1/4 cup salsa verde
- 15 crunchy taco shells

Instructions
- Heat oven to 400F. Spray 9x13 baking pan with non-stick spray
- Cook the ground meat over medium-high heat until browned
- Add can of tomatoes, salsa verde, 1/2 cup of cheese and taco seasoning to the meat. Stir to combine
- Line the taco shells standing up in the baking pan.
- Spoon the taco mixture into each shell until all meat is used up
- Sprinkle the remaining shredded cheese over the the tacos and bake for 15-20 minutes.
- Before serving, top with shredded lettuce, tomatoes, cilantro, greek yogurt (sour cream) and any desired toppings!

I’ve only done the baked tacos thing once but it was SO good! Why don’t I do it every time?! Going to put this one on the dinner schedule for next week!

I have made these before and they are wonderful! Have some leftover watermelon salsa so I just have to make these tonight!
