The Super Bowl and comfort foods go hand in hand, am I right? Sunday was raining and overcast in Atlanta so I tossed this easy taco ranch chicken chili into the crockpot and it was ready to go come game time. It definitely had some heat to it, but I make my own taco seasoning and add in red pepper flakes, so that could have been the culprit. This can easily be doctored up based on preference — a squeeze of fresh lime, cheese, greek yogurt/sour cream, etc.
note: this was taken the following day and the liquid portion significantly decreased. I’d recommend adding chicken broth to it (or this would be amazing over quinoa/mixed greens) when warming it up!

- 3 16 oz can great northern beans do not drain
- 1 10 oz can rotel do not drain
- 1 packet taco seasoning
- 1 packet ranch seasoning
- 1 lb chicken boneless and skinless

Instructions
- Place chicken in the crockpot (I always put mine in frozen) and top with beans, rotel and seasoning packets.
- Stir to combine and cook on low for 8 hours or high for 4 hours.
- When done cooking, stir to shred the chicken. Serve and top with avocado, cheese, sour cream (plain greek yogurt makes the perfect substitute) and fresh cilantro.
