Skinny Bean and Queso Dip

This past weekend for a Saturday filled with football, I pulled out my trusty Skinnytaste cookbook and tried a delicious new appetizer. This took no time at all to throw together and was a big hit! You know it’s a success when the guys are going back for more and they don’t believe that it’s “light”. Adding this permanently into the appetizer rotation.

Skinny Bean and Queso Dip

ingredients:
1 (15 oz) can fat- free refried beans
1 tbsp taco seasoning
1 1/4 c. jarred medium salsa
1 (4 oz) can diced green chiles
1 1/2 c. shredded mexican cheese ( I used monterey jack with jalapeños )
1 tsp chopped fresh cilantro
chopped green onions (optional)
tortilla chips, to serve with

directions:
Heat oven to 350 degrees F. Spray a 9×9 baking dish with non-stick spray. In a bowl combine the refried beans and taco seasoning. Spread the mixture across the bottom of the baking dish. Top with the salsa and green chilies. Bake until the edges start to bubble, about 30 minutes. Remove from the oven, top with cheese and place back in the oven. Bake a few minutes more to melt the cheese. Take out from the oven and top with cilantro and green onions.
