Tortellini Pasta SaladTerrafirma Serving Platter
I’m big on recipes that are seasonal and use lots of fresh, easy to find ingredients. During the summer there’s such a wide variety of fresh fruits and veggies available (and on sale!) that’s it’s a no brainer to find recipes that feature them. Another win: not having to heat up the kitchen by baking something in the stove. This pasta salad took no time to toss together and we loved the fresh flavors melding together. We also stirred in a scoop of pesto for added punch. If you needed some extra protein, grilled chicken would taste delicious in this pasta salad too!

Tortellini Pasta Salad with Tomatoes, Basil and Fresh Corn

ingredients:
22-ounce package frozen (or fresh) cheese tortellini 
3 cups (about 16 ounces) sliced cherry or grape tomatoes (halved or quartered, depending on size)
2 1/2 cups fresh corn kernels
1/4 cup fresh basil leaves, sliced in a chiffonade
2 tablespoons grated Parmesan cheese
Fresh ground black pepper

vinaigrette:
1/2 cup olive oil
1 tablespoon red wine vinegar
1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
2 tablespoons grated Parmesan cheese
1 tablespoon finely minced fresh basil
1/2 teaspoon fresh minced garlic
1/2 teaspoon garlic salt
Freshly ground black pepper

directions:
Boil tortellini in salted water according to package directions. Drain and cool. In a large salad bowl, combine tortellini, sliced tomatoes, fresh corn kernels, fresh chopped basil, Parmesan cheese, and pepper.

Combine all vinaigrette ingredients in a jar with a tight fitting lid. Shake vigorously. Pour over tortellini salad and gently mix all ingredients until well combined. Chill pasta salad several hours before serving.

    My husband and I recently sold our house so we are temporarily living with my in-laws. I’ve been wanting to cook for them, but it’s been a challenge with so many picky eaters under one roof. This recipe looks like it would be a crowd pleaser 🙂 I’m going to test it on them! Thanks for sharing!

    This looks amazing! I love your addition of Dijon mustard in the dressing – some of my favorite dressings use mustard and I think it gives dishes a great flavor! And yay for using fresh corn!
