Healthy Taco Skillet

Back at it this Tuesday with another healthy Mexican spin. This easy, healthy taco skillet is so good and packed with nutrients! Switch out the base and serve it over fresh greens, quinoa, brown rice or even just alone paired with some tortilla chips. It’s great warmed up the next day for a filling lunch or another dinner. Top with fresh avocado, shredded cheese and greek yogurt (or sour cream)!

Healthy Taco Skillet

ingredients:
1 lb lean ground turkey
1/2 yellow onion, diced
2 bell peppers, diced
1 can diced tomatoes with green chilies
taco seasoning
2 cups baby kale or mixed greens blend
1 cup shredded cheddar cheese
avocado, sliced, optional
green onions, sliced, optional
greek yogurt (sub for sour cream), optional

directions:
Brown the ground turkey over medium-high heat and break up any large pieces. Drain the fat, add the diced onions and peppers and cook until browned. Add in the tomatoes, taco seasoning and any water that is needed to coat the mixture (not more than 1 tbsp recommended). Dump the fresh greens into the mixture and let wilt. Stir to evenly mix. Sprinkle shredded cheese on top and let melt.  Top with avocado slices, diced green onions and greek yogurt.

    This looks so yummy, Ashley! I love swapping turkey from ground beef and Greek yogurt for sour cream. So much healthier and you can’t really taste the difference! So fun that you can switch out the base to create a completely new meal!
