chicken zoodle

Zucchini noodles, or as I prefer, zoodles, are one of my favorite healthy food swaps. Brian and I are both major thai food lovers so I’m always searching for new recipes that will satisfy our craving and still be a smart meal choice. Homemade peanut butter sauces are some of my favorite in these style dishes and this one is no different. It packs major flavor and is so easy to make. To me toppings make all the difference in a recipe, so don’t leave out the fresh cilantro, green onions and chopped peanuts on this one. Our leftovers even heated great the next day for lunch, which I sometimes worry about with zoodles.

For all of the zoodle recipes I’ve ever made I’ve used this $15 spiralizer (plus the coupon they always mail out) and it’s worked great! You don’t have to spend a lot of money on a fancy machine to get good zucchini noodles. 🙂

Since you’re already picking up the purple cabbage for this dish, go ahead and use the other half of it for this salad. Get your money’s worth and it’s one less meal you’ll have to plan!

Peanut Chicken Zoodles

ingredients:
2 Tablespoons sesame oil (you’ll need more for the peanut sauce below)
2 teaspoons minced or chopped garlic
1 cup shredded carrots
1 cup thinly sliced cabbage (I use purple)
1 large bell pepper, thinly sliced (I use red)
3 large zucchini, spiralized into noodles
2 large chicken breasts, cooked & shredded (about 2-3 cups)
Toppings: sesame seeds, fresh cilantro, chopped peanuts, chopped green onion

peanut sauce:
1/2 cup creamy peanut butter (next time I’d use a little less of this)
1/3 cup honey
1/3 cup low sodium soy sauce
2 Tablespoons sesame oil
2 Tablespoons rice vinegar
2 teaspoons fresh ginger, grated
2 teaspoons Sriracha

directions: 
Heat the sesame oil and garlic in a skillet over medium heat. Then, add in carrots, sliced cabbage and pepper. Continue cooking for another 5 minutes. Dump in the zucchini noodles and shredded chicken to the mixture. Heat for another 3 minutes, stirring ocassionaly. Set this mixture aside.
For the peanut sauce, combine all ingredients in a saucepan over low heat. Stir frequently so the peanut butter melts and is incorporated into the sauce. Pour the sauce over the chicken and veggie mixture and stir to evenly combine.
Top with sesame seeds, cilantro, chopped peanuts and green onion and enjoy!

    Zoodles scare me. We are not huge pasta eaters, so I never know how to make them, we are big Thai food eaters though. So I will have to try this!

    This looks delicious and definitely something that I would try!! I don’t have one of those vegetable slicer/zoodle maker though, do you think that I could try to use the shredder piece on the food processor? Or maybe just cut the veggies?     Made this last night and it was delicious! Since there are just two of us, I cut the recipe in half and still have leftovers. I would cut back a little on the peanut butter. Will definitely make again!

    I took your recommendation and purchased the same spiralizer – that thing is amazing, and you can’t beat the price! Definitely don’t think you need anything super fancy for this. This meal looks delicious, as always!
