Today I’m bringing you another one of my crock pot go-to meals, white chicken chili. There are numerous ways to make this recipe, but this is my fail proof version that I haven’t strayed from. To me chili is the epitome of colder weather, football season and lazy days where you don’t feel like cooking and let the crock pot do the work for you (as it should). I also like to freeze individual sizes so they’re easier to defrost and perfect portions.
White Chicken Chili
ingredients:
1 1/4 lbs. chicken (I personally like chicken thighs in this, but breasts are fine too!)
2 (15 oz) cans great northern beans (drained and rinsed)
1 (15 oz) can white corn
1 envelope taco seasoning
1 (4 1/2 oz) can chopped green chilies
1 can condensed cream chicken soup
1 can chicken broth
1/2 c. sour cream
optional:
chopped green onions
monterey jack cheese
directions:
Place chicken in crock pot and top with beans and corn. In a bowl combine taco seasoning, chiles, soup and chicken broth. Pour over top of chicken and cook on low for 8-10 hrs. When time is up stir gently to break up chicken. Next stir in the sour cream. Serve topped with green onion and shredded cheese.
I think I may love whiten chicken chili more than the normal kind! This stuff looks oh so good! I definitely want to give it a go!
Yum..I definitely like regular chili more than white chicken chili…but the wcc is a close second!
I have never tried white chicken chili, but have been seeing a ton of recipes for it. I will have to give yours a try!

This looks delish! I’ve been all about using my crock pot lately. Even normal recipes that aren’t actual crock pot meals have ended up in it. Ok, so I just saw you are moving to Atlanta, GA?? My sister is wrapping up a job in Ohio and moving to Atlanta at the beginning of December.
