Grilled Artichokes

Grilled artichokes are one of those appetizers that I love when I see them on the menu, but rarely make at home. Most of the really tasty ones are paired with creamy, fatty dips and I try to avoid those when possible. This grilled version doesn’t require a dip for tasty results and instead relies on fresh squeezed lemon and garlic. You can throw this together in under 30 minutes and it would make a great appetizer when you’re having friends over or if you’re looking for something to snack on while preparing dinner. Simple, clean eating that I’ll be making again soon!

Lemon Garlic Grilled Artichokes

ingredients:
2 large artichokes
1 lemon, quartered
3/4 c. olive oil
4 cloves garlic, minced
1 tsp. salt
1/2 tsp. black ground pepper
parmesan cheese (optional)

directions:
Fill a large bowl with water and squeeze the juice from one lemon wedge into the water. Trim the tops from the artichokes, cut in half lengthwise and place halves into the bowl of lemon water to prevent from browning. Bring a large pot of water to boil and cook for 15 minutes. Drain and squeeze the remaining lemon wedges into a medium bowl. Stir in the olive oil, garlic and season with salt & pepper. Pre-heat an outside grill for medium-high heat.
Brush the artichokes with a coating of the garlic dip and  place on the grill. Grill the artichokes for 5-10 minutes, basting with the tip and turning frequently until the tips are a little charred. Serve immediately with the remaining dip.
I sprinkled ours with fresh parmesan to top it all off.

    Yum! I love fresh, whole artichokes! I ate them at every meal while we were in Rome. They do something unbelievable to them over there that I can’t quite figure out. This looks tasty and easy!!! Can’t wait to try it!

    i think artichokes are the only fruit/veg that have ALL the daily vitamins in them. love it!
