Seasame Quinoa Bowl

Bathing suit weather is right around the corner so I’m sticking with a recent favorite healthy meal option for this week. I love that this one can be customized to your liking and can be made vegetarian or loaded with meat. The easiest way to meal prep for the week is to make a batch of quinoa on Sunday and use it for various meals throughout the week. This dish is packed with flavor and will keep you full through the workday!

Sesame Kale Bowl
via the glowing fridge

ingredients:
1 cup quinoa, cooked
1/2 tbsp coconut oil/sesame oil
1/4 of a red onion, chopped
1 clove garlic, minced
1 cup kale, chopped
1 cup broccoli (I left this out)
4 ounces cooked chicken, tempeh, meat of choice
1 tbsp soy sauce
1 tbsp water
juice from 1/2 lime
1/4 tbsp dijon mustard
1/2 tsp fresh ginger, minced or powdered
dash of red pepper flakes
1-2 tbsp sesame seeds

directions:
Cook quinoa according to package directions. Meanwhile, in a small saucepan, melt the coconut oil on med-high heat. Add the red onion and sauté for 2-3 minutes. Add the garlic, kale, veggies and protein. Sauté for about 3 minutes. In a small bowl, combine the tamari, water, lime juice, dijon mustard, ginger, red pepper flakes and sesame seeds. Add mixture to saucepan with vegetables and mix until combined. Cook for about 2 minutes. Once quinoa is finished cooking, scoop 1 cup into a bowl and top with the vegetable mixture. Add extra soy sauce as needed.

* I followed the above recipe for 1 serving, but you could easily double it to feed more.

    I love the mix of ingredients in this one! I would have left the broccoli out as well definitely the kale is probably just enough! How good would that be with like ahi tuna? Yum! Thanks for sharing!

    This looks amazing! I finally braved it up and purchased some quinoa. Though I suspect something went wrong. I understand it’s supposed to have that al dente taste, but mine was just hard. I’m hoping I just did something wrong? Do you have a preferred brand?

    Ooohh this looks delicious and could make a great vegetarian option for me! I always get a boost of motivation this time of year to start making healthy dishes and get my butt in gear because ready or not, my daisy dukes are going to be coming out of hiding very soon!
