When registering for wedding gifts two years ago we kept it mostly to day to day items that we knew we’d use and love (aka no fondue set). One fun item we did add was this waffle maker, which I feel like most people register for and never actually use. Except we love breakfast foods and get so much use out of this one on the weekends! I’m always trying out new waffle recipes and try to find ones on the healthier side. These greek yogurt waffles are super simple, has ingredients you likely already have at home and I love that it sneaks in extra protein with the greek yogurt!

We love topping ours with lots of fresh blueberries, strawberries or raspberries and warm maple syrup! This madagascar vanilla bean ghee is so delicious and adds the perfect amount of sweetness. I found mine from Whole Foods in the refrigerated section and a little will last you a realllyyyy long time.

Greek Yogurt Waffles
via two sisters kitchen

ingredients:
2 cups flour
1 tbsp + 2 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
2 eggs
1/2 cup greek yogurt (I used 0% plain)
1 3/4 milk
1 tbsp maple syrup
1 tsp vanilla extract

directions:
Preheat waffle iron and spray with non-stock spray. In a bowl mix the flour, salt, baking powder and cinnamon. Set aside. In another bowl mix the eggs, milk, greek yogurt, maple syrup and vanilla extra together. Slowly stir in the flour mixture and mix until combined. Small lumps in the batter are ok! Scoop 1/3 c batter onto the waffle iron and cook according to machine instructions.

Top with fresh fruit, ghee butter and maple syrup!

    These sounds delicious! I think you may be missing the greek yogurt in your ingredients list, though. Unless maybe I am on the one that is missing something. 🙂

    We didn’t get a waffle maker for a wedding gift…but we decided we needed one afterwards, so we bought it with gift cards and let me tell you-we love ours SO much. I use it to make so many more things than just waffles, it’s awesome!
