After my recent poll on Instagram stories about sharing a weekly dinner menu, it sounds like an overwhelming yes! I’ve found that meal planning works best for our family since I can save time by already having a game plan each night, avoid multiple grocery store runs and keep our meals healthy(er) during the week! For extra busy work days I like to pick a crockpot recipe or one I know that can be ready in under 30 minutes with minimal steps.
I love cooking, so aim to cook majority of the nights and then we plan to eat out Friday and Saturday nights. Sunday night is a toss up, but I like to keep it easy regardless. Here’s what’s on the agenda this week:
MONDAY:
homemade nachos & crispy cauliflower buffalo
TUESDAY:
lemon garlic butter orzo & fish parchment packets
we prefer white fish with this and picked up wild caught mahi
WEDNESDAY:
20 minute red curry basil garlic oil noodles & Trader Joe’s dumplings
THURSDAY:
salsa verde chicken and rice tortilla soup
will likely do this in the crockpot!
FRIDAY & SATURDAY:
eat out!
SUNDAY:
slow cooker pot roast with french bread

for breakfasts this week I’m making a favorite healthy baked oatmeal (so easy to warm up each morning!) and will prep overnight oats the night before. The girls love these as well so it makes my mornings a little easier!
