Holiday season is quickly approaching and while I was working on this post it dawned on me that it would be the perfect healthy side dish to be to Thanksgiving, Friendsgiving, Christmas, etc. Easy to make, ready in under 30 minutes and it’ll help balance out all the sweets and sweet potato casseroles that are consumed. Of course it’s also a super tasty weeknight side dish that we love adding into our rotation. xx

Ingredients
- 1/3 cup sliced almonds
- 1 lb fresh green beans trimmed and cut into 2-3" pieces
- 1/4 cup water
- 1/2 tsp himalaya sea salt
- 2 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 2 tsp dijon mustard
- 1 small garlic clove
- black pepper
- pinch red pepper flakes
- 1/4 cup crumbled feta cheese
- 3-4 large basil leaves torn or chopped, for garnish
- lemon zest for garnish

Instructions
- Spray a large skillet with non-stick spray and add the sliced almonds to the pan over medium heat
- Cooking, stirring frequently for 3 minutes. Be careful to not burn them! After 3 minutes, turn the heat down to medium-low and stir continuously for another 1-3 minutes. Place the almonds on a plate and set aside
- With the heat still on med-low, place the green beans in the pan and add water and 1/4 tsp salt
- Place a lid on the green beans and cover, stirring every now and then for 7-10 minutes and the green beans soften.
- Take off the lid, increase the heat to high and cook until the remaining liquid is gone, around 2-4 additional minutes.
- In a small jar or container, mix the olive oil, lemon juice, mustard, garlic, black pepper, red pepper flakes and 1/4 tsp salt. Stir to combine and set aside
- Pour the olive oil mixture into the pan with the green beans, add the toasted almonds and half of the crumbled feta. Stir to evenly coat everything, adding more lemon juice or pepper if desired.
- Top dish with the remaining crumbled feta, lemon zest and fresh basil. Enjoy!
