We’ve made this easy grilled mahi mahi recipe countless times and it’s always a hit. It can be pulled together from start to finish in under 30 minutes and is perfect for busy weeknights or summer weekends when it’s hot out and you’re craving something light and refreshing for dinner. We usually serve it with grilled corn, a small side salad or a caprese salad.

Ingredients
Cilantro Gremolata
- 1/4 cup cilantro finely chopped (can also use mint, parsley, basil or combination)
- 1 tsp shallot finely diced
- 1 tsp lemon zest
- sale and pepper to taste
Grilled Lemons
- 2 lemons halved
- 1 tbsp oil I typically use olive oil
Grilled Mahi Mahi
- 4 mahi mahi fillets can also use red halibut, snapper or cod
- 3 tbsp oil I use olive oil
- salt & pepper

Instructions
Cilantro Gremolata
- Combine all ingredients for the gremolata in a small bowl. Cover and set aside in the refrigerator.
Grilled Lemons
- Cut lemons in half and brush with oil. Grill cut side down for 1 minute and set aside.
Grilled Mahi Mahi
- Heat grill to high
- Brush the fish fillets with the oil on both sides and season with salt and pepper
- Place the fillets on the grill, close the cover and let cook for 4-5 minutes per side.
- Plate the fish and squeeze grilled lemon slices on top. Drizzle with olive oil and spoon gremolata over the fish.Enjoy!
