Last week when I knew our schedules were going to be a bit crazier, I put together a list of quick and easy meals that were easy to assemble and all cooked under 45 minutes. This healthy oven baked fajitas recipe was a breeze to prepare, healthy and a great way to satisfy a Mexican food craving! I sliced the vegetables and chicken before picking Olivia up from school and stored it, covered, in the fridge until bake time. We served ours on my go-to Siete tortillas and topped with fresh greek yogurt, cilantro and avocado.

Ingredients
Chicken Seasoning
- 1 tbsp chili powder
- 1/2 tbsp paprika
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper
- 1 tsp sugar
- 1/2 tsp salt
Fajitas
- 1 medium yellow onion
- 3 bell peppers any colors
- 1 lb boneless, skinless chicken breasts
- 2 tbsp oil (of your choice) I use refined coconut oil (has no coconut oil flavor)
- 1 medium lime
- tortillas
- sour cream/greek yogurt
- fresh cilantro
- avocado or guacamole

Instructions
- Heat oven to 400F. Combine all chicken seasoning together in a small bowl and set aside.
- Slice the onion, bell peppers and chicken breasts into thin strips. Add everything to a 9x13 baking pan.
- Lightly drizzle the oil over the chicken and vegetable mixture and stir to evenly coat. Next, sprinkle the seasoning mixture over the pan and stir again to make sure all pieces are evenly coated.
- Cook 35-38 minutes, stirring once halfway through
- Squeeze 1/2 a lime over entire pan once finished cooking.
- Place chicken and vegetable mixture into tortillas, top with greek yogurt/sour cream, fresh cilantro and avocado. Enjoy!
