I absolutely love the abundance of fresh fruit that every summer brings. This healthy baked blueberry crisp was the perfect recipe to use up a container of fresh blueberries and justΒ feels like a classic summer dessert. During the off season this could easily be made with frozen blueberries! We like to top our crisps off with vanilla ice-cream and highly recommend it!

Ingredients
Fruit Mixture
- 4 cups blueberries
- 1 lemon juiced
- 1/4 cup chia seeds
- 3 tbsp coconut sugar
Crumb Topping
- 1 cup old fashioned oats (not quick cooking)
- 1/2 cup whole wheat flour
- 1/4 cup coconut sugar
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- dash salt
- 1/3 cup butter or coconut oil room temperature

Instructions
- Heat oven to 350 degrees and spray a 8x8 or 9x9 baking dish with non-stick spray
- Combine all the 'fruit mixture' ingredients together and stir to evenly coat
- Add the blueberry mixture to the baking dish and spread to evenly distribute
- For the crumb topping, in another bowl combine the oats, flour, coconut sugar, cinnamon, nutmeg and salt.
- Cut the butter or coconut oil into the oat mixture with either knives or with your hands. You want the mixture to have small clumps pieces
- Spread the crumb topping on top of the berry mixture in the pan
- Bake 40-45 minutes
- Top with vanilla ice cream and enjoy!
