It’s safe to say I found a new favorite oatmeal raisin cookie recipe. Most days I’d choose chocolate chip over any other cookie type, but these oatmeal raisin are so insanely good it’s a tie. Plus, oatmeal cookies are practically oatmeal…. and a healthy option, right? I made these with almond flour, but you could also use whole wheat or regular all-purpose flour. These are soft, chewy and full of flavor! I’d recommend storing these in the fridge after baking.

Ingredients
- 1 cup instant oats
- 3/4 cup almond flour whole wheat or all-purpose will work as well
- 1 1/2 tsp baking powder
- 1 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 2 tbsp coconut oil cooled
- 1 large egg room temperature
- 1 tsp vanilla extract
- 1/2 cup maple syrup agave or honey can also be subbed
- 1/4 cup raisins

Instructions
- In a medium size bowl stir together the instant oats, flour, baking powder, cinnamon and salt. Set aside
- In another bowl whisk together the egg, coconut oil and vanilla. Add in the maple syrup and stir to evenly combine.
- Add the wet ingredients to the dry bowl and stir to combine. Add in the raisins
- Cover and chill the dough in the fridge for 30 minutes
- Heat oven to 325 F. Scoop cookie dough into balls and flatten a little with your hand or a glass cup. Bake 11-14 minutes
