Vanilla Cake with Whipped Cream and Berries

During spring/summer I gravitate towards meals that are quick, light and let you spend longer time outside and less time cooking. This easy vanilla cake with whipped cream and fresh berries really isn’t even a recipe… it’s simply combining a few different parts into one easy dessert! This would be perfect to bring to a dinner with friends, a summer barbecue or even Easter if you need something simple.

The cake portion could be made the night before and the fresh whipped cream will store in the fridge for 2-3 days. Top with any of your favorite fresh seasonal berries!

Ingredients
Vanilla Cake
  • 1 box Trader Joe's Vanilla Cake Mix
  • 2 large eggs
  • 1 stick butter melted
  • 1 cup milk cold
Whipped Cream
  • 1 cup heavy cream chilled
  • 2 tbsp granulated sugar I used coconut sugar
  • 1 tsp vanilla extract

Instructions
Vanilla Cake
  1. Prepare the cake according to package directions in a greased 8x8 pan.
  2. Once baked set aside to cool
Whipped Cream
  1. Chill a bowl and whisk attachment in the fridge for 15 minutes. I used my Kitchenmaid mixer, but you'll need either a stand or handheld mixer for this.
  2. Pour all ingredients into the bowl and whisk slowly for a few seconds to combine everything.
  3. Switch to high and whisk for around 2-3 minutes, or until stiff peaks form
