Beef Bowl Recipe

Back with a super quick and easy weeknight dinner! You can easily make this in under 15 minutes or less. I love how versatile this recipe is and you could use an mixture of veggies! I had thinly sliced brussels sprouts in the fridge so that’s what we used. Baked crispy broccoli would be so good on this too! Use whatever you have on hand or what you’re craving.

If you haven’t tried the frozen pork gyoza dumplings from Trader Joe’s you have to pick them up on your next trip! They also have chicken and vegetable options. Cook for 9 minutes in sesame oil and they’re insanely good paired with this dish!

I’m addicted to cooking our rice in the instant pot! The finished product tastes like the rice that takes 30 minutes to cook, but is done in half the time. I rinse 1 cup of organic basmati brown rice and rinse it 3 times with water — until the water runs relatively clear. In the instant pot add 1 cup of rice, 1 cup of water, 1.5 tbsp of coconut oil and Himalaya pink sea salt. Cook on the rice setting for 12-15 minutes.

Assemble your bowl and enjoy!

  • 1/4 cup brown sugar
  • 1/4 cup coconut aminos can also use soy sauce
  • 2 tsp sesame oil
  • 1/2 tsp crushed red pepper flakes
  • 1/4 tsp ground ginger
  • 1 lb grass fed ground beef
  • 1 tbsp refined coconut oil can also use vegetable oil
  • 3 cloves garlic minced
  • 2 green onions thinly sliced
  • sesame seeds, for topping
  • rice, cooked

  • 1/4 cup brown sugar

Instructions
  1. In a small bowl, combine the brown sugar, soy sauce/coconut aminos, sesame oil, red pepper flakes and ginger. Set aside
  2. In a large skillet, heat the coconut oil and cook the minced garlic over medium heat for 1 minute. Add the ground beef to the pan and cook until browned
  3. Once cooked, drain the excess fat. Stir the brown sugar/soy sauce mixture into the pan and stir to evenly combine. Simmer for a few minutes on low.
  4. Serve over cooked brown rice and topped with green onions and sesame seeds.

we also add sautéed brussel sprouts (broccoli is delicious too!), sliced thinly.
