spicy sausage pasta

This is without a doubt one of those recipes that I’ll make over and over again. Tuesday night at the beach B and I tackled this delicious spicy sausage and mixed wild mushrooms pasta. The flavors come together in such a wonderful combination and the sausage addition completes the meal. It could easily serve 6 for dinner or leave lots of leftovers for the week. I’m already brainstorming excuses for when we can make it again…

Spicy Sausage & Mixed Wild Mushroom Pasta

ingredients
1 tbsp olive oil
9 ounces spicy sausage, casings removed
1 onion, finely chopped
1 clove garlic, minced
1 lb. mixed wild mushrooms (we used cremini and baby bella)
2 tbsp fresh thyme leaves
1-2 small dried red chilies, crumbled (we couldn’t find this and omitted it)
salt & pepper
16 oz. pasta
3-4 tbsp unsalted butter (we used less than 1 tbsp)
1/2 c. loosely packed flat leaf parsley, chopped
1/2 c. freshly grated Parmesean cheese

directions
In a large skillet over medium-high heat, add sausage, onion and garlic, breaking up the sausage with a wooden spoon. Cook until the onions are golden, about 7 minutes. Add mushrooms, thyme and chilies. Cook, stirring frequently or until the mushrooms release their liquid and it evaporates, about 10-12 minutes.  Remove from heat and season with salt & pepper.
Meanwhile, bring a large pot of water to boil and cook the pasta noodles. Cook until al-dente, 3-5 minutes. Reserve a 1/2 c. of the pasta water and drain the rest. Return pasta to the pot.
Add butter to mushroom mixture along with some of the cooking liquid to loosen if necessary. Add mushroom mixture to pasta pot and toss to combine. Transfer to a serving platter and top with fresh parsley and cheese.
