Pelmeni RecipeDuring any Trader Joe’s trip I’m always scouting out the new items that sound good. While grabbing a bag of their cauliflower gnocchi I noticed their ‘chicken and mushroom Pelmeni’ next to it. I grabbed them to try and ended up using the bag last night for a quick and easy weeknight dinner.

Pelmini’s are a type of Russian dumpling and come in a variety of fillings. These chicken and mushroom ones were really good and something different than your standard pasta! If you can’t find it, you can always sub with your favorite tortellini.

Easy Weeknight Pelmeni Recipe
Servings
Ingredients
  • 1 16 oz pelmeni package can also sub tortellini
  • 1 large handful fresh greens power greens, arugula, kale
  • 1 8 oz cherry tomatoes halved
  • 1 jalapeno seeded and diced
  • 4 green onions sliced
  • 3 cloves garlic minced
  • 1/2 cup chopped fresh parsley
  • 2 tbsp extra virgin olive oil
  • fresh Parmesan cheese grated

  • 1 jalapeno seeded and diced
  • 4 green onions sliced
  • 3 cloves garlic minced
  • 1/2 cup chopped fresh parsley
  • 2 tbsp extra virgin olive oil
  • fresh Parmesan cheese grated
Instructions
  1. Cook Pelmeni according to package directions. Drain and set aside
  2. In a large skillet or wok, heat 2 tbsp of olive oil and add the garlic and diced jalapeño. Saute on low-medium for 2 minutes.
  3. Add the green onions and tomatoes to the pan and stir to combine. Season with salt and pepper (to taste). Cook for 4 minutes.
  4. Add the Pelmeni and fresh greens to the pan. Gently stir to evenly mix. You want the greens to start wilting and shrink. Sprinkle with fresh Parmesan and mix again.
  5. Serve in bowls and top with fresh parsley and parmesan cheese.

    Looks really quick and so easy….I may a splash of red pepper flakes to spice it up a notch.
